Quick Oat Bars with Tiger Nuts

Ingredients

  • 200g oats
  • 100g tigernut flour (or almond flour)
  • 1 tsp baking powder
  • 3 tsp chia seeds
  • 3 tsp coconut sugar (or date sugar)
  • 3 tsp peanut butter
  • 8 tsp agave nectar (or apple sauce)
  • 1 sweet potato
  • cinnamon
  • vanilla
  • tigernut flakes (or shaved almond)
  • 80ml water

Preparation

  1. Preheat oven to 180°C

  2. Cook sweet potato until soft, then mash it

  3. In a bowl, mix all dry ingredients: oats, tigernut flour, baking powder, chia seeds, coconut sugar, cinnamon, and vanilla

  4. In another bowl, mix all wet ingredients: peanut butter, agave nectar, water, and mashed sweet potato

  5. Combine wet and dry mixtures, then stir in tigernut flakes

  6. Press the mixture into a baking pan

  7. Bake for 20-25 minutes or until golden brown

  8. Allow to cool before cutting into bars
