Quick Oat Bars with Tiger Nuts
Ingredients
- 200g oats
- 100g tigernut flour (or almond flour)
- 1 tsp baking powder
- 3 tsp chia seeds
- 3 tsp coconut sugar (or date sugar)
- 3 tsp peanut butter
- 8 tsp agave nectar (or apple sauce)
- 1 sweet potato
- cinnamon
- vanilla
- tigernut flakes (or shaved almond)
- 80ml water
Preparation
Preheat oven to 180°C
Cook sweet potato until soft, then mash it
In a bowl, mix all dry ingredients: oats, tigernut flour, baking powder, chia seeds, coconut sugar, cinnamon, and vanilla
In another bowl, mix all wet ingredients: peanut butter, agave nectar, water, and mashed sweet potato
Combine wet and dry mixtures, then stir in tigernut flakes
Press the mixture into a baking pan
Bake for 20-25 minutes or until golden brown
Allow to cool before cutting into bars
