Peanut Butter and Jam Chia Parfait

Ingredients

Chia layer

  • 1/4 cup chia seeds
  • 1/2 tsp vanilla extract
  • 6 drops stevia
  • 1 1/4 cup almond milk

Strawberry chia jam

  • 1 1/2 cup chopped fresh or frozen strawberries
  • 3 to 4 tbsp coconut sugar
  • 3 tbsp chia seeds

Toppings

  • Peanut butter
  • Crushed nuts
  • Fresh strawberries
  • Dried cranberries
  • Chocolate bar (optional)

Pb sauce

  • 1 tsp peanut butter
  • Drizzle of maple syrup
  • Bit of almond milk

Preparation

  1. Mix the chia layer ingredients together and refrigerate overnight

  2. For the strawberry chia jam, put all the ingredients in a small pot with 2 tablespoons of water, then blend with a stick blender or mash with a potato masher

  3. Heat the jam over medium heat until bubbling, then reduce the heat and stir until thick, about 5 minutes

  4. Layer the parfait with peanut butter in between, add some crushed nuts, and top with fresh strawberries, dried cranberries, more nuts, and optionally a chocolate bar

  5. For the PB sauce, mix 1 teaspoon of peanut butter with a drizzle of maple syrup and a bit of almond milk until smooth, then drizzle over the top
