Vegan Coconut Pancakes with Banana Toppings
Ingredients
- 1.5 cups plain flour
- 1.5 tbsp baking powder
- 3/4 cup desiccated coconut
- 3 tbsp brown sugar (Demerara)
- A pinch of sea salt
- 1.5 cups plant milk
- 3 tbsp plant based butter or coconut oil
Preparation
Mix all ingredients together until a batter is made.
Put one ladle full of batter in a pan and cook until golden.
Serve with maple syrup, banana, and blueberries.
