Vegan Coconut Pancakes with Banana Toppings

Ingredients

  • 1.5 cups plain flour
  • 1.5 tbsp baking powder
  • 3/4 cup desiccated coconut
  • 3 tbsp brown sugar (Demerara)
  • A pinch of sea salt
  • 1.5 cups plant milk
  • 3 tbsp plant based butter or coconut oil

Preparation

  1. Mix all ingredients together until a batter is made.

  2. Put one ladle full of batter in a pan and cook until golden.

  3. Serve with maple syrup, banana, and blueberries.
