Vegan Pancakes with Fresh Fruit Toppings

Ingredients

  • 1/2 cup self raising flour
  • 1 cup plain flour
  • 1 cup plant milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)

Preparation

  1. Add all the ingredients to a mixing bowl and whisk together.

  2. Heat a frying pan and add a little bit of marg or coconut oil. Once melted, add a big spoonful of pancake mixture.

  3. Once the pancake has started to get air bubbles in the top, flip the pancake. Once cooked, enjoy!

  4. Top the pancakes with maple syrup, strawberries, blueberries, banana, Oreos, and peanut butter for added flavor.
