Baked Paleo Gluten-Free Chicken Tenders

Ingredients

  • 1 lb chicken tenders (about 6-7 tenders)
  • 1 egg
  • 1/4 cup coconut flour
  • 2 tbsp nutritional yeast (can omit or sub Parmesan cheese)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper

Optional

  • sprinkle of chipotle powder for spice

Preparation

  1. Take 2 shallow bowls, add the egg to one and whisk it.

  2. Add the coconut flour and spices to the other bowl and mix together.

  3. Dip each chicken tender in the egg, then in the flour mixture.

  4. Bake at 400°F for 10 minutes, flip, and bake for another 10 minutes.

  5. Check the internal temperature to ensure the chicken is done.
