Chicken Souvlaki, Greek Salad & Tzatziki and a Slice of Focaccia, Bit of an Italian, Greek Mashup

Ingredients

  • 600g boneless skinless chicken thigh cut into bite sized pieces
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tbsp dried oregano
  • 2 cloves garlic finely grated
  • 3/4 tsp chilli powder (reduce for less heat)
  • 3/4 tsp cumin powder
  • 1 heaped tsp smoked paprika
  • good pinch of salt and pepper

Preparation

  1. Mix all the ingredients except the chicken in a mixing bowl

  2. Then add the chicken and stir well to ensure all pieces of chicken are coated in the marinade

  3. Put in the fridge for 2-12 hours to marinate - longer is better

  4. Soak wooden skewers during this time

  5. Remove chicken from fridge, roughly divide into 3 or 4 depending on how many skewers you want to make and then thread the chicken down the pointy edge of the skewers

  6. Threading through two points of each piece of chicken will make it more secure

  7. Cook under a hot grill or on the bbq

  8. Cooking times will vary depending on the size and how densely you pack the skewers but large ones shown here take around 5 mins on both sides under a hot grill xx
