Classic Homemade Meatloaf Served with Tomato Sauce
Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 3 tbsp tomato purée
- 500g minced beef
- 1 egg
- 85g breadcrumbs
Tomato sauce components
- 1 carrot, finely diced
- 1 onion, finely diced
- 1 celery stick, finely diced
- 2 cloves garlic, crushed
- 600g tomato passata
- Season to taste
- Optional: add dried herbs such as oregano, thyme, rosemary, or a squeeze of lemon juice
Preparation
Preheat oven to 180C/fan 160C.
Heat the oil in a pan and sauté the onion and garlic for a few mins until soft. Set aside and leave to cool a little.
Mix the cooked onion with the rest of the ingredients in a large bowl. Line a loaf tin with baking paper, fill with the mixture and press down to pack in.
Bake for 20-25 mins, leave to rest for 10 mins before serving.
Sauce method
Heat a non stick pan with a little oil and sauté the carrot, onion and celery for 6 mins.
Add the garlic and cook for a further 2 mins.
Add the passata, stir and simmer on low for 10 mins.
