Classic Homemade Meatloaf Served with Tomato Sauce

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 3 tbsp tomato purée
  • 500g minced beef
  • 1 egg
  • 85g breadcrumbs

Tomato sauce components

  • 1 carrot, finely diced
  • 1 onion, finely diced
  • 1 celery stick, finely diced
  • 2 cloves garlic, crushed
  • 600g tomato passata
  • Season to taste
  • Optional: add dried herbs such as oregano, thyme, rosemary, or a squeeze of lemon juice

Preparation

  1. Preheat oven to 180C/fan 160C.

  2. Heat the oil in a pan and sauté the onion and garlic for a few mins until soft. Set aside and leave to cool a little.

  3. Mix the cooked onion with the rest of the ingredients in a large bowl. Line a loaf tin with baking paper, fill with the mixture and press down to pack in.

  4. Bake for 20-25 mins, leave to rest for 10 mins before serving.

Sauce method

  1. Heat a non stick pan with a little oil and sauté the carrot, onion and celery for 6 mins.

  2. Add the garlic and cook for a further 2 mins.

  3. Add the passata, stir and simmer on low for 10 mins.
