Tex-Mex Air Fryer Chicken with Vegetables
Ingredients
- 3-6 chicken tenderloins
- 2 cups of fresh or frozen broccoli (thawed)
- 1/2 sliced red onion
- 1-2 stalks celery
- 1 tablespoon of bacon fat or ghee, or fat of your choice
- 1-2 teaspoons Tex-Mex seasoning (I use balanced bites)
Preparation
Melt cooking fat in medium sized fry pan on medium heat.
Season chicken with blend and place in Air Fryer at 360 for 10 minutes. Or per the instructions on your Air Fryer. Each one is different.
In the meantime, place onions and celery in fry pan to soften (about 5 minutes).
Add broccoli after veggies soften and stir. Let fry for at least 5 minutes or longer if you prefer.
Once the chicken is done, plate veggies and top with the chicken.
Garnish with scallions, cilantro, salsa, and sour cream.
