Vegan Peanut Chickn Quinoa Bowl

Ingredients

  • 1/4 cup dry quinoa, cooked to instructions
  • vegan chickn chunks, sautéed
  • edamame
  • sweetcorn
  • grated carrot
  • red pepper
  • sugar snaps
  • broccoli
  • mango
  • tomato
  • salted peanuts
  • smashed avocado
  • peanut sauce (1 heaped tbsp smooth peanut butter, dash of soy sauce, juice of 1/2 lime, some grated fresh ginger, maple syrup, dash of sesame oil and water as needed)

Preparation

  1. Start by cooking the quinoa

  2. Stir the peanut sauce ingredients together and add water until it’s a smooth sauce but not too runny, taste and adjust amounts

  3. Sauté the vegan chickn in a pan, put aside

  4. Sauté them edamame, sweetcorn, carrot, red pepper and sugar snaps

  5. Meanwhile steam the broccoli and chop the mango and tomato

  6. Fluff up the quinoa, stir in all the sautéed veggies and the peanut sauce and mix until combined

  7. Serve in a bowl with the broccoli, tomato, vegan chickn (quickly reheat in the pan), chopped salted peanuts, some avocado and the remaining 1/2 a lime
