Garlic and Lemon Oven-Baked Fish

Ingredients

  • 6 - 8 pieces of white fish (ideally cod/haddock)
  • 60g butter
  • 6 - 8 garlic cloves, finely sliced
  • 3 tbsp plain flour
  • 1/2 litre milk
  • water as needed
  • 1 tsp English mustard
  • 3/4 tsp of salt
  • handful of fresh chopped parsley
  • the juice of one lemon

Preparation

  1. Melt butter in a pan and add the sliced garlic, keeping the flame low to infuse the butter without cooking the garlic. Next, add plain flour to create a roux.

  2. Add milk gradually to the roux, ensuring it is absorbed before adding more. If the white sauce is too thick, add water to thin it. Then, add salt, mustard, lemon juice, and chopped parsley. Taste and adjust seasoning as necessary.

  3. Place the white fish pieces in a baking dish or cast iron skillet, pour the sauce over them to coat, and cook at 200°C for 15-20 minutes until cooked through.

  4. Serve with your favorite sides and enjoy.
