15-Minute Vegan Pasta Dish
Ingredients
- 2 portions of wholewheat pasta
- A small drizzle of olive oil
- 1 tsp garlic puree
- 1 tsp chilli flakes
- 1 tsp free from green pesto
- 2 small shallots or half white onion
- A handful of cherry tomatoes
- A handful of mushrooms
- 100-200g frozen soy mince
- 200g tomato passata or half a tin of chopped tomatoes
- 1 tsp mixed herbs
- salt and pepper
- 1 tbsp nutritional yeast
- handful of spinach
Preparation
Cook the pasta with a pinch of salt for flavor.
Fry the garlic puree, chilli flakes, pesto, and shallots in olive oil for a few minutes with a dash of water.
Prepare the cherry tomatoes and mushrooms, then add them to the pan.
Add the soy mince and tomato passata, and stir well.
Add mixed herbs, salt, pepper, and nutritional yeast, then simmer for 5 minutes or until the pasta is ready.
Stir in the spinach.
Rinse and drain the cooked pasta, then add it to the pan and stir everything together.
Serve with fresh rocket and chia seeds, if desired.
