Achard Legumes, Mauritian Spicy Pickled Vegetables with Turmeric

Ingredients

  • About 2 heaping cups of finely julienned veggies (e.g. carrots
  • cabbage
  • green beans
  • cauliflower
  • pepper bells)
  • 1 onion finely chopped
  • 1 tablespoon grated turmeric root
  • 3 tablespoons black mustard seeds
  • 2 tablespoons crushed garlic
  • 4-5 tbsp. vegetable oil
  • salt to taste
  • sliced green chile pepper to taste (jalapeno or Serrano)
  • 2 tablespoons white vinegar

Preparation

  1. Quick blanch the julienned veggies and onion

  2. Blend together mustard seeds, turmeric, garlic, onion, and a little of water to make a paste

  3. Heat oil, add the spice paste and salt, saute over very low heat until fragrant

  4. Add vegetables and chile pepper, stir to coat

  5. Remove from heat

  6. Allow to cool and stir in the vinegar

  7. Store in a jar and serve the next day so the flavors can infuse
