Air-Fried Cauliflower Gnocchi with Vegan African Peanut Sauce

Ingredients

  • Frozen cauliflower gnocchi
  • Coconut oil spray or olive oil spray
  • Broccoli
  • Mushrooms
  • 1/2 cup vegan African peanut soup
  • 1/3 cup water
  • Nutritional yeast
  • Optional: tofu or tempeh

Preparation

  1. Spray the bottom of the air fryer with coconut or olive oil spray and place frozen gnocchi flat in the fryer basket. Set on 400 degrees and air fry for 8 to 12 minutes depending on desired crispiness.

  2. Add broccoli and mushrooms to a pan with 1/3 cup of water and steam over medium heat for 5 minutes.

  3. Once the vegetables have softened, add 1/2 cup of vegan soup to the pan on medium to low heat and allow the soup to thicken into a sauce for 4 minutes.

  4. When the gnocchi is at the desired crispiness, stir it into the sauce and allow it to soak in the remaining sauce before serving. Optional: add protein like tofu or tempeh.

  5. Top with nutritional yeast and enjoy.
