Vegan Veggie Stir Fry with Baked Tofu

Ingredients

Baked tofu

  • 1 block tofu, drained and pressed
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • mushrooms, sliced
  • onion
  • broccoli
  • bell pepper
  • 2 tbsp water
  • tamari
  • 1 tbsp sweet chili sauce

Preparation

Baked tofu

  1. Cut the tofu into cubes

  2. Place tofu cubes in a container and add garlic chili sauce, tamari, and nutritional yeast

  3. Seal the container and gently shake to coat the tofu

  4. Transfer the coated tofu to a lined baking sheet

  5. Bake in the oven at 400°F for 20 to 25 minutes

Stir fry

  1. In a pan, add sliced mushrooms and onion; sauté until onions are translucent

  2. Add broccoli, a splash of tamari, and 2 tablespoons of water

  3. Cover the pan and cook until broccoli turns bright green, about 4 to 5 minutes

  4. Add bell pepper, another splash of tamari, and sweet chili sauce

  5. Sauté until the vegetables are fully coated and most of the liquid has cooked off, about 3 minutes

  6. Add the baked tofu and coat with the sauce; remove from heat

Serving

  1. Serve the stir fry over cooked brown jasmine rice
