Vegan Veggie Stir Fry with Baked Tofu
Ingredients
Baked tofu
- 1 block tofu, drained and pressed
- 2 tsp garlic chili sauce
- 1 tbsp tamari
- 1 tbsp nutritional yeast
Stir fry
- mushrooms, sliced
- onion
- broccoli
- bell pepper
- 2 tbsp water
- tamari
- 1 tbsp sweet chili sauce
Preparation
Baked tofu
Cut the tofu into cubes
Place tofu cubes in a container and add garlic chili sauce, tamari, and nutritional yeast
Seal the container and gently shake to coat the tofu
Transfer the coated tofu to a lined baking sheet
Bake in the oven at 400°F for 20 to 25 minutes
Stir fry
In a pan, add sliced mushrooms and onion; sauté until onions are translucent
Add broccoli, a splash of tamari, and 2 tablespoons of water
Cover the pan and cook until broccoli turns bright green, about 4 to 5 minutes
Add bell pepper, another splash of tamari, and sweet chili sauce
Sauté until the vegetables are fully coated and most of the liquid has cooked off, about 3 minutes
Add the baked tofu and coat with the sauce; remove from heat
Serving
Serve the stir fry over cooked brown jasmine rice
