Another Vegan Caesar Salad

Ingredients

  • kale
  • arugula
  • white beans
  • chickpeas
  • dressing
  • pumpkin seeds
  • sunflower seeds
  • hemp hearts
  • avocado
  • vegan cashew parm
  • Dressing ingredients
  • 1 cup cashews
  • 1 cup water
  • 3 garlic cloves
  • 2 tbsp mustard
  • 3 tbsp nutritional yeast
  • 2 tbsp capers
  • large lemon juiced

Preparation

  1. Make dressing by adding all ingredients into a blender, blend till smooth and taste and adjust if you want more or less of anything. Example more lemon or more garlic

  2. Cut & wash kale, massage it with lemon and warm water to soften it. Set aside w water in bowl for 10 minutes

  3. Make crispy chickpeas by adding coconut oil and paprika into pan, stir the chickpeas every minute not letting it burn. Do this till it gets crispy

  4. Drain rise white beans and set aside

  5. Drain and rinse kale one more time, add to a bowl with arugula, add white beans, crispy chickpeas, dressing. Toss around. Add seeds and hemp hearts. And toss around

  6. Cut up avocado in cubes and add to the top and sprinkle some vegan parm
