Baked Spaghetti Squash Bowls with Shrimp and Veggies

Ingredients

  • spaghetti squash
  • shrimp
  • zucchini
  • onions
  • mushrooms
  • coconut oil spray

Preparation

  1. Cut the spaghetti squash in half; if too hard, microwave for a few minutes to soften.

  2. Remove the seeds and stringy parts.

  3. Spray a baking pan with coconut oil spray.

  4. Place the squash halves face down on the pan.

  5. Bake in the oven for about 40 minutes.

  6. Remove and use a fork to pull out the spaghetti strands.

  7. Cook shrimp at 400°F for 15 minutes.

  8. Grill zucchini, onions, and mushrooms on a cast iron skillet.
