Baked Spaghetti Squash Bowls with Shrimp and Veggies
Ingredients
- spaghetti squash
- shrimp
- zucchini
- onions
- mushrooms
- coconut oil spray
Preparation
Cut the spaghetti squash in half; if too hard, microwave for a few minutes to soften.
Remove the seeds and stringy parts.
Spray a baking pan with coconut oil spray.
Place the squash halves face down on the pan.
Bake in the oven for about 40 minutes.
Remove and use a fork to pull out the spaghetti strands.
Cook shrimp at 400°F for 15 minutes.
Grill zucchini, onions, and mushrooms on a cast iron skillet.
