Leftover Taco Bowl with Sautéed Vegetables
Ingredients
- leftover ground beef
- peppers
- zucchini
- onions
- mushrooms
- avocado oil
- cauli rice
- 1/2 avocado
Preparation
Heat a big pan over medium heat.
Add a little avocado oil.
Sauté the vegetables for the bowl.
Microwave the cauli rice or sauté it if preferred.
Assemble the taco bowl with leftover beef, sautéed veggies, cauli rice, and avocado.
You can customize by adding any meat and veggies you want.
Including bell pepper provides vitamin C, which helps absorb iron from the meat better.
