Savory Pizza Stuffed Spaghetti Squash Bake
Ingredients
- 1 spaghetti squash
- Mushrooms
- Onions
- Spinach
- Marinara sauce
- Pepperoni
- Feta cheese
- Italian seasoning
Preparation
Microwave spaghetti squash for 2-3 minutes to soften it for easier cutting, or boil it if preferred.
Preheat oven to 400F.
Slice the spaghetti squash in half and spoon out the seeds; you can clean and roast the seeds separately if desired.
Grease a baking pan.
Place the spaghetti squash halves face down on the pan and bake for 40-45 minutes.
Sauté mushrooms, onions, and spinach.
Optionally scoop out some of the cooked spaghetti squash from the halves if not eating all at once.
Add marinara sauce, pepperoni, feta cheese, and Italian seasoning to the squash halves.
Bake for an additional 10 minutes.
Enjoy the dish, preferably eaten straight out of the squash boats for fun.
