BBQ Shredded Jackfruit Salad with Fresh Vegetables

Ingredients

  • 1 can jackfruit
  • 1 teaspoon garlic
  • 1 teaspoon chili powder
  • 1/4 cup BBQ sauce
  • 1 teaspoon olive oil
  • avocado
  • tomatoes
  • jalapeños
  • onions
  • mushrooms

Preparation

  1. Drain and rinse the jackfruit, then pat it dry.

  2. Cut the jackfruit into small cubes, about one inch in size.

  3. Coat the jackfruit with 1 teaspoon garlic, 1 teaspoon chili powder, and 1/4 cup BBQ sauce.

  4. Heat a pan over low heat and add 1 teaspoon olive oil.

  5. Add the jackfruit to the pan, cover, and cook at a simmer for 35 minutes.

  6. Add another 1/4 cup BBQ sauce halfway through cooking for more flavor.

  7. After cooking, transfer to a bowl and shred with two forks.

  8. Add a few more tablespoons of BBQ sauce and mix well.

  9. Pair with avocado, tomatoes, jalapeños, onions, and sautéed mushrooms to assemble the salad.

Tips

  1. Ensure the BBQ sauce is vegan if making a plant-based version.
