Creamy Veg Packed Chickpea Pasta

Ingredients

  • 1/2 tbsp of miso paste
  • 2 tbsp tomato purée
  • 2 sun dried tomatoes (and a tsp of the oil)
  • 1tsp of sweet paprika
  • splash of oat milk
  • red bell pepper
  • 2 handfuls of cherry tomatoes and 3 garlic cloves

Preparation

  1. Roast 1 red bell pepper, 2 handfuls of cherry tomatoes and 3 garlic cloves at 170° for 30-40 mins until soft and juicy

  2. Sauté half a red onion? (in a large pan) until caramelised and soft

  3. Add any veg you like! I added thin courgette slices? (coin shaped), aubergine cubes? and sliced mushrooms?

  4. Once veg is soft and a bit caramelised, add the sauce and mix

  5. Then cook the pasta to instructions

  6. Add a handful of spinach to the pot just before the pasta

  7. Add the pasta to the veggies with some reserved pasta water to mix everything together
