“Eggy” Chickpea Salad

Ingredients

  • 1 can of chickpeas, rinsed & drained
  • 2 tbsp vegan mayo
  • 1/2 stalk of celery, halved lengthwise and then thinly sliced
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 pinch of each sea salt (to taste) & ground pepper
  • 5 grape tomatoes, halved
  • 1 pinch of Kala Namak/black salt (I usually use 1/4-1/2 tsp

Preparation

  1. Mix everything in a bowl and enjoy;)
