High Protein BBQ Spice Lentil Bowl
Ingredients
- 70g puy lentils
- 1 onion
- 1 teaspoon extra virgin olive oil
- half a can of Haricot beans
- Harissa seasoning
- Jack Daniels BBQ sauce
- handful of spinach
- salt and pepper
- fresh parsley
- chopped tomato
- lemon juice
Preparation
Boil 70g of puy lentils in boiling water for 25 minutes until soft.
Ten minutes before lentils are done, chop and dice an onion, then add 1 teaspoon of extra virgin olive oil to a pan on medium heat and add the onion to the pan.
Add half a can of Haricot beans or any beans of your choice.
Season the beans with Harissa seasoning or spice of your choice.
Add a dollop of Jack Daniels BBQ sauce to the beans and stir.
Once lentils are done, drain any excess water and rinse under cold water.
Add the lentils to the pan with the beans, add a handful of spinach, and mix together until the spinach wilts; season with salt and pepper to taste.
Add fresh parsley, chopped tomato, and lemon juice before eating.
