High Protein Tomato Risotto

Ingredients

  • 1 onion and 2 small garlic cloves in olive oil
  • 1 cup of lentil rice
  • 5 cups worth of Flavourful Tomato soup

Preparation

  1. I finely chopped 1 onion and 2 small garlic cloves in olive oil till fragrant

  2. Added 1 cup of lentil rice and stirred everything together so it gets nicely coated

  3. Then I added 2,5 cups worth of Flavourful Tomato soup

  4. Covered and let it simmer for about 15 minutes(check the instructions on the pack how long your rice needs)

  5. When the rice is fully cooked, I seasoned with freshly cracked black pepper and added a big handful of basil leaves and small handful of chopped sundried tomatoes

  6. You can add more stock or water during cooking as well to get the level of creaminess that you love
