Kale Lentil Farro and Fig Warm Power Bowl

Ingredients

  • kale
  • avocado oil
  • cooked lentils (from ready-to-eat pack)
  • 1/3 cup farro
  • curry
  • garlic powder
  • paprika
  • salt
  • fresh figs
  • avocado

Tahini sauce

  • 1 tablespoon olive oil
  • 1 tablespoon tahini
  • 1 teaspoon apple cider vinegar
  • 1-2 tablespoons coconut aminos

Preparation

  1. Prepare tahini sauce by mixing 1 tablespoon olive oil, 1 tablespoon tahini, 1 teaspoon apple cider vinegar, and 1-2 tablespoons coconut aminos

  2. In a pan, sauté kale in avocado oil.

  3. Add already cooked lentils and 1/3 cup farro, then warm on low to medium heat.

  4. Add curry, garlic powder, a dash of paprika, and salt.

  5. Serve with fresh figs on top, avocado, and a drizzle of tahini sauce.
