Kale Lentil Farro and Fig Warm Power Bowl
Ingredients
- kale
- avocado oil
- cooked lentils (from ready-to-eat pack)
- 1/3 cup farro
- curry
- garlic powder
- paprika
- salt
- fresh figs
- avocado
Tahini sauce
- 1 tablespoon olive oil
- 1 tablespoon tahini
- 1 teaspoon apple cider vinegar
- 1-2 tablespoons coconut aminos
Preparation
Prepare tahini sauce by mixing 1 tablespoon olive oil, 1 tablespoon tahini, 1 teaspoon apple cider vinegar, and 1-2 tablespoons coconut aminos
In a pan, sauté kale in avocado oil.
Add already cooked lentils and 1/3 cup farro, then warm on low to medium heat.
Add curry, garlic powder, a dash of paprika, and salt.
Serve with fresh figs on top, avocado, and a drizzle of tahini sauce.
