Lentil and Sundried Tomato Salad

Ingredients

  • cooked lentils
  • cooked bulgur wheat
  • sundried tomatoes
  • spinach
  • basil tofu
  • cooled roasted aubergine
  • cooled roasted peppers
  • cooled roasted courgette
  • cooled roasted red onion
  • fresh avocado slices
  • salted cashews
  • sunflower seeds

Tahini dressing

  • tahini
  • lemon juice or apple cider vinegar
  • oil from sundried tomato jar
  • maple syrup
  • salt
  • pepper

Preparation

  1. Mix tahini, lemon juice or apple cider vinegar, oil from sundried tomato jar, maple syrup, salt, and pepper together in a bowl to make the dressing.

  2. In a large bowl, combine the cooked lentils, cooked bulgur wheat, sundried tomatoes, spinach, basil tofu, cooled roasted aubergine, cooled roasted peppers, cooled roasted courgette, cooled roasted red onion, and fresh avocado slices.

  3. Drizzle the dressing over the salad and top with salted cashews and sunflower seeds.
