Peas Soup
Ingredients
- 2 tbs of olive oil
- 3 cloves of garlic
- 1/2 cup of chopped yellow onion
- 1/2 cup of chopped carrots
- 1/3 cup of sliced celery
- 2 tbs of chopped curly parsley
- 3 1/2 cups of filtered water
- 3 1/3 cup of frozen peas
- 2 bay leaves
- 1 1/2 tsp of pink himalayan salt
- 1 tsp of black pepper
- 1/4 tsp of fresh thyme
- 1/4 tsp of oregano
- 1/8 tsp of cayenne pepper
Preparation
In a large pot on medium heat add olive oil, garlic, and onion
Stir well for 1 minute then add carrots celery and parsley
Pour in water and allow to simmer for 10 minutes
Once time is up add peas, bay leaves, and seasonings
Lower heat to medium-low and allow to simmer covered for 40 minutes
Once time is up remove bay leaves and add soup into a blender
Blend until soup is smooth and pour back into pot
Garnish soup with crutons, maple tempeh bacon (recipe can be found in our quinoa and black bean burger recipe a few posts back), and fresh chopped parsely
