Prawn Pad Thai

Ingredients

  • 250g rice noodles
  • 4 tbsp vegetable oil
  • 2 garlic cloves, crushed
  • 2 tbsp ginger, grated
  • 1 small broccoli, florets
  • large handful of frozen peas
  • 2 eggs (lightly beaten)
  • 2 tbsp brown sugar
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 spring onion, finely chopped
  • handful of peanuts, crushed (optional)

Preparation

  1. Soak the noodles in boiling water for 5 mins then drain and set aside

  2. Heat a wok or non stick pan over high and add the oil

  3. Toss in the garlic, ginger and prawns and stir-fry for a few minutes, or until the prawns are cooked

  4. Remove the prawns from the wok, add a splash more oil and the broccoli and cook for a few mins

  5. Stir in the egg and cook for a minute or so

  6. Toss in the frozen peas, drained noodles, sugar, fish sauce, lime juice and prawns, and cook for 2 mins

  7. Serve up with a sprinkle of chopped spring onions and peanuts
