Prawn Pad Thai
Ingredients
- 250g rice noodles
- 4 tbsp vegetable oil
- 2 garlic cloves, crushed
- 2 tbsp ginger, grated
- 1 small broccoli, florets
- large handful of frozen peas
- 2 eggs (lightly beaten)
- 2 tbsp brown sugar
- 3 tbsp fish sauce
- 3 tbsp lime juice
- 2 spring onion, finely chopped
- handful of peanuts, crushed (optional)
Preparation
Soak the noodles in boiling water for 5 mins then drain and set aside
Heat a wok or non stick pan over high and add the oil
Toss in the garlic, ginger and prawns and stir-fry for a few minutes, or until the prawns are cooked
Remove the prawns from the wok, add a splash more oil and the broccoli and cook for a few mins
Stir in the egg and cook for a minute or so
Toss in the frozen peas, drained noodles, sugar, fish sauce, lime juice and prawns, and cook for 2 mins
Serve up with a sprinkle of chopped spring onions and peanuts
