Roasted cauliflower

Ingredients

  • 1 cauliflower, stem trimmed
  • 3 tbsp tikka masala spice paste
  • 2 tbsp gooseberry jam (plum jam also works)
  • 4 garlic cloves
  • 8 cherry tomatoes
  • 1/4 nutritional yeast
  • 1/2 cup oat milk (any dairy free milk)

Preparation

  1. Set the oven to 180c

  2. Cut the cauliflower in half, using a pastry brush coat the cauliflower in the paste

  3. Place the coated cauliflower in a oven proof dish and add in the tomatoes, garlic and 1/4 cup of the oat milk. Cover in tin foil

  4. Place in the oven baking for 30 mins

  5. Remove from the oven, mix the sauce adding in the remaining oat milk. Squash the garlic removing it from the skin. Mix the sauce together & sprinkle the nutritional yeast on top of the cauliflower

  6. Place back in the oven , uncovered for 20 minutes to continue baking

  7. Remove from the oven check the cauliflower is soft to your liking, give the sauce another mix (you can add a little more oat milk if you wish)

  8. Slice and serve with greens of choice & my favourite roasted baby potatoes
