Salad
Ingredients
- 1 pack of black rice noodles @jolly_organics
- 1 cucumber
- 1 carrot
- 1 red radish
- 1/4 red cabbage
- 1 tablespoon of absolute organic white sesame seeds
- beans and alfalfa sprouts
- half the juice of lime
- 1/2 teaspoon ground ginger
- 2 tablespoons of absolute organic peanut butter
- sprinkle chilli flakes
- 2 tablespoons absolute organic coconut amino sauce vinaigrette
Preparation
Prepare the rice noodles according to pack instructions
Strain and put aside in a bowl
Finely chop all the vegetables and place them in a large mixing bowl
Add the noodles to the vegetables and mix together
In a small bowl, whisk together the lime, ground ginger, peanut butter, chilli flakes and amino sauce until a creamy mixture forms
Pour the sauce over the noodle salad and sprinkle white sesame seeds on top
Serve it cold or at room temperature with a wedge of lime, beans and alfalfa sprouts
