Salad

Ingredients

  • 1 pack of black rice noodles @jolly_organics
  • 1 cucumber
  • 1 carrot
  • 1 red radish
  • 1/4 red cabbage
  • 1 tablespoon of absolute organic white sesame seeds
  • beans and alfalfa sprouts
  • half the juice of lime
  • 1/2 teaspoon ground ginger
  • 2 tablespoons of absolute organic peanut butter
  • sprinkle chilli flakes
  • 2 tablespoons absolute organic coconut amino sauce vinaigrette

Preparation

  1. Prepare the rice noodles according to pack instructions

  2. Strain and put aside in a bowl

  3. Finely chop all the vegetables and place them in a large mixing bowl

  4. Add the noodles to the vegetables and mix together

  5. In a small bowl, whisk together the lime, ground ginger, peanut butter, chilli flakes and amino sauce until a creamy mixture forms

  6. Pour the sauce over the noodle salad and sprinkle white sesame seeds on top

  7. Serve it cold or at room temperature with a wedge of lime, beans and alfalfa sprouts
