Fresh Vegetable Salad with Black Rice Noodles

Ingredients

  • 1 pack of black rice noodles @jolly_organics
  • 1 cucumber
  • 1 carrot
  • 1 red radish
  • 1/4 red cabbage
  • 1 tablespoon of Absolute Organic White Sesame Seeds
  • Beans and alfalfa sprouts

Dressing

  • Half the juice of lime
  • 1/2 teaspoon Ground ginger
  • 2 tablespoons of Absolute Organic Peanut Butter
  • Sprinkle chilli flakes
  • 2 tablespoons Absolute Organic Coconut Amino Sauce Vinaigrette

Preparation

  1. Prepare the rice noodles according to pack instructions. Strain and put aside in a bowl.

  2. Finely chop all the vegetables and place them in a large mixing bowl.

  3. Add the noodles to the vegetables and mix together.

  4. In a small bowl, whisk together the lime, ground ginger, peanut butter, chilli flakes and amino sauce until a creamy mixture forms.

  5. Pour the sauce over the noodle salad and sprinkle white sesame seeds on top.

  6. Serve it cold or at room temperature with a wedge of lime, beans and alfalfa sprouts
