Fresh Vegetable Salad with Black Rice Noodles
Ingredients
- 1 pack of black rice noodles @jolly_organics
- 1 cucumber
- 1 carrot
- 1 red radish
- 1/4 red cabbage
- 1 tablespoon of Absolute Organic White Sesame Seeds
- Beans and alfalfa sprouts
Dressing
- Half the juice of lime
- 1/2 teaspoon Ground ginger
- 2 tablespoons of Absolute Organic Peanut Butter
- Sprinkle chilli flakes
- 2 tablespoons Absolute Organic Coconut Amino Sauce Vinaigrette
Preparation
Prepare the rice noodles according to pack instructions. Strain and put aside in a bowl.
Finely chop all the vegetables and place them in a large mixing bowl.
Add the noodles to the vegetables and mix together.
In a small bowl, whisk together the lime, ground ginger, peanut butter, chilli flakes and amino sauce until a creamy mixture forms.
Pour the sauce over the noodle salad and sprinkle white sesame seeds on top.
Serve it cold or at room temperature with a wedge of lime, beans and alfalfa sprouts
