Salad in a Jar

Ingredients

  • 1 head of romaine lettuce
  • 1 cucumber, spiralized and thinly chopped into disks
  • 1 carrot, spiralized
  • 1 cup mung bean sprouts
  • 1 cup blueberries
  • 1 tablespoon miso paste
  • 2 lemons
  • 1 yellow onion
  • 1 cup quinoa
  • 1 cup buckwheat

Preparation

  1. Finely chop yellow onion, then combine with lemon juice and miso paste and lit sit for as long as possible (more than 2 hours will give you better flavor in the onion, so if you think ahead do it overnight in the fridge) Next, cook quinoa and buckwheat to packet instructions (I prefer it not to be overcooked for salads so keep an eye on it if you like it that way too) Finely, put the dressing on the bottom of the jar and combine with all other raw, cut, cleaned ingredients and enjoy
