Traditional Vegan Hodge Podge from Nova Scotia

Ingredients

  • New potatoes (amount not specified)
  • Beans (amount not specified)
  • Carrots (amount not specified)
  • Peas (optional)
  • 1 can full fat coconut milk
  • Salt (to taste)
  • Pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch or other thickening agent
  • Fresh chives (for serving)

Preparation

  1. Steam the vegetables (new potatoes, beans, carrots, and peas if available) for 20-25 minutes.

  2. In a medium-sized pot, combine 1 can of full fat coconut milk, salt, pepper, 1 teaspoon garlic powder, 1 tablespoon cornstarch (or other thickening agent), and the steamed vegetables.

  3. Bring the mixture to a low boil over medium-high heat.
