Traditional Vegan Hodge Podge from Nova Scotia
Ingredients
- New potatoes (amount not specified)
- Beans (amount not specified)
- Carrots (amount not specified)
- Peas (optional)
- 1 can full fat coconut milk
- Salt (to taste)
- Pepper (to taste)
- 1 teaspoon garlic powder
- 1 tablespoon cornstarch or other thickening agent
- Fresh chives (for serving)
Preparation
Steam the vegetables (new potatoes, beans, carrots, and peas if available) for 20-25 minutes.
In a medium-sized pot, combine 1 can of full fat coconut milk, salt, pepper, 1 teaspoon garlic powder, 1 tablespoon cornstarch (or other thickening agent), and the steamed vegetables.
Bring the mixture to a low boil over medium-high heat.
Reduce heat and simmer until the mixture thickens.
Serve immediately with fresh chives. This makes 4 servings.
