Veganized Nigerian / Yoruba Vegetable

Ingredients

  • palm oil (you can use other oil)
  • 1 can of white button mushroom (cut into four pieces)
  • 8-10 Cayenne pepper (finely diced)
  • kale
  • onions
  • garlic
  • spices and seasonings

Preparation

  1. First: I prepared the mushrooms with caramelized onions and garlic as if it was a side dish and set that aside

  2. Next: in a pot, fry garlic, onions in palm oil. Add your favourite seasonings and spices. Followed by your diced Cayenne pepper. After frying for a while, add in water, chilli flakes, paprika, chilli powder and leave to boil down

  3. Toss your mushroom/onion/garlic mixture you made earlier. Turn down the heat of your burner. Taste and add spices before you finally add your kale after that has cooked for a while
