Vibrant Vegan Unicorn Hummus with Beets
Ingredients
- 1 (15.5oz) can chickpeas or 2 cups cooked
- 1 small roasted beet, chopped
- 1 to 2 garlic cloves minced
- 2 to 4 TBSP tahini
- 2 to 4 TBSP extra virgin olive oil
- fresh lemon juice to taste
- salt and pepper to taste
Preparation
Drain the chickpeas, and store the liquid (aquaba) in the fridge for other uses.
Blend all ingredients in a food processor until combined; taste and adjust to your preference.
Note: add the beets, a little at a time, to the food processor until it reaches the color you want.
