Vibrant Vegan Unicorn Hummus with Beets

Ingredients

  • 1 (15.5oz) can chickpeas or 2 cups cooked
  • 1 small roasted beet, chopped
  • 1 to 2 garlic cloves minced
  • 2 to 4 TBSP tahini
  • 2 to 4 TBSP extra virgin olive oil
  • fresh lemon juice to taste
  • salt and pepper to taste

Preparation

  1. Drain the chickpeas, and store the liquid (aquaba) in the fridge for other uses.

  2. Blend all ingredients in a food processor until combined; taste and adjust to your preference.

  3. Note: add the beets, a little at a time, to the food processor until it reaches the color you want.
