Authentic Thai Green Curry

Ingredients

  • 1/2 tsp toasted coriander seeds⁣
  • 1/4 tsp toasted cumin seeds⁣
  • 1 tbs lime zest⁣
  • pinch salt⁣
  • 1 tbs galangal⁣
  • 2 tbs lemongrass⁣
  • 15 green birds eye chillis, chopped⁣
  • 3 tbs chopped garlic⁣
  • 3 tbs chopped red shallot⁣
  • 1 tbs chopped coriander stem⁣
  • 8 baby corn⁣
  • handful of daikon strips⁣
  • 1.5 tbs light soy sauce⁣

Preparation

  1. Make a paste by pounding all curry paste ingredients in a mortar and pestle. 2 In a hot wok or pot add coconut cream and heat on high for a couple minutes until the cream splits⁣

  2. Fry 2 tbs of the paste in the cracked cream for a 1 minute then add tofu and stir for a further minute⁣

  3. Add stock then simmer for 5 minutes⁣

  4. Season with soy sauce then add baby corn and radish and simmer for a further 2 mins⁣

  5. Garnish with shredded kaffir lime leaf, Thai basil, and a couple slices of red chilli. Serve with Jasmine rice
