Cauli-Rice Salad with Fresh Veggies and Goat Cheese

Ingredients

  • 1 bag Trader Joe's riced cauliflower
  • 1 tablespoon olive oil
  • salt
  • pepper
  • 3 Persian cucumbers
  • 2 green onions
  • 1/3 cup parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-3 tablespoons goat cheese

Preparation

  1. Cook the riced cauliflower in 1 tablespoon olive oil over medium-low heat and season with salt and pepper.

  2. Scrape the cooked cauliflower onto a sheet pan and put it in the fridge to cool.

  3. Quarter and chop 3 Persian cucumbers.

  4. Slice 2 green onions and chop 1/3 cup parsley.

  5. Whisk together 2 tablespoons olive oil, 2 tablespoons lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon pepper.

  6. Add the chopped vegetables and dressing to the cooled rice in a mixing bowl.

  7. Crumble 2-3 tablespoons of goat cheese over the top and toss everything together.
