Cauli-Rice Salad with Fresh Veggies and Goat Cheese
Ingredients
- 1 bag Trader Joe's riced cauliflower
- 1 tablespoon olive oil
- salt
- pepper
- 3 Persian cucumbers
- 2 green onions
- 1/3 cup parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2-3 tablespoons goat cheese
Preparation
Cook the riced cauliflower in 1 tablespoon olive oil over medium-low heat and season with salt and pepper.
Scrape the cooked cauliflower onto a sheet pan and put it in the fridge to cool.
Quarter and chop 3 Persian cucumbers.
Slice 2 green onions and chop 1/3 cup parsley.
Whisk together 2 tablespoons olive oil, 2 tablespoons lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
Add the chopped vegetables and dressing to the cooled rice in a mixing bowl.
Crumble 2-3 tablespoons of goat cheese over the top and toss everything together.
