Dinner Bowl

Ingredients

  • roasted sweet potato?(tossed in salt, paprika, garlic powder & mixed herbs and roasted for 30mins on 200°c?)
  • - roasted aubergine, broccoli & smoked tofu?? (tossed in salt, garlic powder & mixed herbs; I put these in 15 mins after the sweet potato!?)
  • - bulgar wheat & couscous mix?cooked with veg stock
  • - spinach?
  • - hummus

Preparation

  1. The veg came out so crispy n delish? (I forgot how good roasted sweet potato is?) and I loved having it with the grain, fresh spinach and hummus (which I haven’t had in aaaages!)

  2. This was such a yummy dinner and definitely a student fave! Save for inspo
