Quick Nutritious Vegan Dinner Bowl

Ingredients

  • sweet potato
  • aubergine
  • broccoli
  • smoked tofu
  • bulgar wheat and couscous mix
  • spinach
  • hummus
  • vegetable stock

Preparation

  1. Toss sweet potato with salt, paprika, garlic powder, and mixed herbs, then roast at 200°C for 30 minutes.

  2. After 15 minutes of roasting the sweet potato, toss aubergine, broccoli, and smoked tofu with salt, garlic powder, and mixed herbs, then add them to the oven.

  3. Cook the bulgar wheat and couscous mix with vegetable stock according to package instructions or until done.

  4. Assemble the bowl by combining the roasted vegetables and tofu with the cooked grains, fresh spinach, and hummus.
