Ingredients

  • 2/3 cup onion, diced
  • 1 tsp cumin, ground
  • 2 tsp chili powder (optional)
  • Chipotle powder, to taste (optional)
  • 1 1/3 cup vegetable broth, low-sodium
  • 1 1/3 cup water
  • 1 1/2 cup salsa, chunky
  • 2 cups black beans, cooked, rinsed
  • 3 cups sweet potato, chopped into bite-size pieces
  • Avocado, sliced 1 (optional)
  • Cilantro, fresh (optional)
  • Cashew Sour Cream (optional)

Preparation

  1. Start on the chili by adding onions to a large pot. Cook over medium heat until they become soft and translucent

  2. Add cumin and your choice of optional spices and cook for 3 minutes

  3. Add vegetable broth, water, and salsa and increase heat to medium-high. Bring to a boil then reduce heat to medium-low

  4. Add black beans and sweet potatoes. Cover pot and continue to simmer for 20 minutes

  5. Serve with avocado, fresh cilantro and/or Cashew Sour Cream
