Vegan Super Green Pasta with Spinach

Ingredients

  • dash of oil
  • 1/2 onion, finely chopped
  • 1 garlic clove, crushed
  • 1/2 cup frozen peas
  • unsweetened coconut or almond milk
  • handful of baby spinach
  • salt and pepper
  • 2 tablespoons nutritional yeast
  • pasta of choice
  • avocado, sliced
  • hemp seeds

Preparation

  1. Add a dash of oil to a pan with 1/2 finely chopped onion.

  2. Cook the onion for 5 minutes until soft and caramelised.

  3. Add 1 crushed garlic clove.

  4. Add 1/2 cup of frozen peas and enough unsweetened coconut or almond milk to cover the peas.

  5. Let it cook for another 5 minutes.

  6. Add a generous handful of baby spinach, plenty of salt and pepper, and about 2 tablespoons of nutritional yeast.

  7. Pour everything into a blender and blend until super smooth.

  8. Mix with the pasta of your choice and top with sliced avocado and hemp seeds. If no avocado, omit or add extra peas or cherry tomatoes.
