Easy Vegan Peanut Ginger Dressing for Summer Rolls

Ingredients

  • 1/3 Cup peanut butter - crunchy or smooth, I use crunchy as I prefer the texture
  • 1 1/2 Tbls rice wine vinegar
  • 2 Tbls grapeseed oil
  • 1 Tbls Tamari
  • 1 Tbls pure maple syrup
  • 1/2 Lime - squeezed
  • 1/2 inch Fresh Ginger - finely grated
  • 1 small clove garlic - minced

Preparation

  1. Place dressing ingredients into a bowl and gently whisk until combined!

  2. If you find it too thick just add a little water!
