Fancy Yet Easy Spanakopita Triangles
Ingredients
- 1/2 package thawed fillo dough
- 2 10 oz packs of chopped frozen spinach
- 2 medium yellow onion chopped
- 4 cloves garlic minced
- 1 tsp olive oil
- 2 Tbl corn starch
- 2 12 oz packs firm @morinutofu
- 1/2 cup chopped kalamata olives
- 1 tsp dried dill
- Pinch ground nutmeg
- 1/2 cup olive oil
Preparation
Preheat oven to 350 F. Line 2 baking sheets with parchment.
Saute onions and garlic in 1 tsp olive oil.
Add Tofu and crumble in the pan with a spatula. Cook until tofu starts to brown and much of the water is out. About 10 minutes. Let cool.
In separate bowl add thawed and drained spinach.
Mix together all ingredients.
Brush one sheet of dough with oil. Add another sheet and brush.
Cut into 3 long strips.
Place 2-3 Tbl filling on one end and fold into triangle like a middle school love note.
Place on baking sheet and brush the top with oil.
Bake for 45-50 minutes until browned.
