Healthy Nut and Seed Granola Bars

Ingredients

  • 1 cup oats
  • 1 1/2 cups mixture of nuts and seeds (I have used almonds, sunflower seeds and walnuts)
  • 1/2 cup buckwheat grain
  • 1 cup cranberries
  • 1 cup dried apricots
  • 1/4 cup agave syrup or maple syrup
  • 1/4 cup water
  • 1 tsp ground cinnamon
  • 1/8 tsp salt

Preparation

  1. Line an 8 inch baking tray with parchment and set aside.

  2. Spread nuts and seeds on a lined baking tray and bake in the oven at 180℃ for 10 minutes. Alternatively dry roast in a pan on stove top.

  3. Blend apricots, agave and water to a fine paste and transfer to a large bowl.

  4. Combine dry and wet ingredients together and transfer to the prepared pan. Place parchment paper on top, smoothen and discard the paper.

  5. Bake in a preheated oven at 180℃ for 20 minutes or till the edges brown a little.

  6. Pull the tray out of the oven and let cool. Slice them into bars and enjoy the nutty and healthy bars.
