Chocolate Granola with Bananas, Nuts, and Spices

Ingredients

  • 1 tablespoon flaxseed meal
  • 2 tablespoons water
  • 2 very ripe bananas (add more if you want it sweeter)
  • 1 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 + 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 + 1/2 cups rolled oats
  • 1/2 cup cashews
  • 1/2 cup chopped up dates
  • 1/2 cup cocoa powder (I use @greenandblacks)

Preparation

  1. Preheat the oven to 180°C. Line a large baking tray with parchment paper or tin foil.

  2. Whisk together the flaxseed meal and water in a large bowl. Let sit for 5 minutes.

  3. Add the banana and mash throughly. Mix in the cinnamon, nutmeg, ginger, cocoa, vanilla extract and salt. Stir in the oats and nuts and mix until well combined.

  4. Transfer the mixture to the baking tray. Bake for 20 - 25 minutes (just keep an eye on it and cook till golden brown).

  5. Once cooled, store in an airtight container. Enjoy with your fave plant-based milk, in a smoothie bowl, with yogurt and fruit, or just by the handful.
