Lentil Umami Burger

Ingredients

  • 1 cup lentils, cooked (or canned)
  • 1 cup mushrooms, chopped (of choice)
  • 2 tablespoons olive oil + 2 tbs for cooking
  • 1 large flax eggs (1 tbs flax meal + 3 tbs water)
  • 3 tablespoons panko bread crumbs*
  • 2 tablespoons miso paste
  • 1 teaspoon smoked paprika
  • salt & pepper to taste
  • whole wheat burger buns
  • your aioli and veggies of choice

Preparation

  1. Bring dried lentils to a boil in salt water for 15-20 minutes

  2. Lentils will still be slightly firm and not mushy

  3. Drain and dry completely

  4. In a large mixing bowl, combine lentils, mushrooms, olive oil, miso, and seasonings

  5. Using a potato masher, fork, or food processor - mash all ingredients together

  6. Leave a few chunks for texture

  7. Fold the flax egg and panko bread crumbs into the mixture until well combined

  8. Mixture should be sticky (but not mushy to stick on your hands) and firm enough to bind pattties

  9. Make the patties and size accordingly to the size of your burger buns

  10. Pan fry on a cast iron or a skillet with 2 tablespoons of oil

  11. Until it browns on each side

  12. Serve in a toasted bun and your choice of veggies and aioli

  13. I used a vegan aioili sauce with mayo, ketchup, and a little bit of paprika

  15. Gluten free option by using gf ap flour or gf oat flour / grinded oats
