Piperade and Cream Cheese Toast

Ingredients

  • 1-2 tablespoons extra-virgin olive oil
  • 1 medium shallot, thinly sliced
  • 1 green bell pepper, seeded and thinly sliced
  • 1 red bell pepper, seeded and thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 1 (14-ounce) can whole peeled tomatoes
  • 1/2 teaspoon brown sugar
  • Sea salt, to taste
  • Black pepper, to taste
  • Kite Hill Foods Everything cream cheese
  • Handful of soft baby greens and herbs, such as watercress, baby spinach, baby kale, or sorrel
  • Good quality wholesome bread

Preparation

  1. Heat the oil in a large skillet over medium heat. Add the shallot, bell peppers, salt, and peppers. Cook until the vegetables are tender and caramelized, about 10 minutes, stirring occasionally.

  2. Blend or squeeze the tomatoes with your clean hands to break them apart. Add the tomatoes and sugar to the skillet. Stir, taste and adjust the seasoning as needed. Reduce the heat to low and cook the sauce for 10 minutes until it’s reduced and thick.

  3. Toast good quality wholesome bread.

  4. Spread a thick layer of Kite Hill Foods everything cream cheese on the toast and top it with piperade.

  5. Enjoy with soft greens and herbs.
