Pizza Muffins

Ingredients

  • 1 cup chickpea flour
  • 1 cup all purpose flour
  • 1 cup almond milk
  • 1/4 cup grated vegan mozzarella (@sheese_australia)
  • 1 punnet cherry tomatoes
  • 1 tsp dried basil
  • 1 tsp dried chives
  • 1 tsp baking powder

Preparation

  1. Preheat oven to 180°c

  2. Add ingredients to a bowl and mix until combined

  3. Pour into muffins trays

  4. Bake for 30 minutes or until cooked through

  5. Store in the fridge for up to a week

  6. Can be frozen too

  7. Can use fresh herbs instead if you have them
