Rainbow Spring Rolls
Ingredients
- 1 packet goodcatchfoods - naked in water
- 1 medium carrot
- tsp miso paste
- tbsp soy sauce
- heaped tbsp agave/maple syrup
- thumb sized piece of ginger- grated
- 100g red cabbage
- 1 garlic clove- crushed • water
- 1/2 avocado
- 1 red pepper
- rice paper wraps
- 2 tbsp almond butter
- juice from half a lime
- pinch chilli flakes
Preparation
Fill a deep plate with warm water ready to soak the rice paper
Thinly slice or shred the carrot, cabbage and red pepper, then slice the avocado into strips
Place one of the rice paper wraps into the water and soak until softened, then carefully transfer this into a
Dry surface
Place some of the good catch tuna and a selection of sliced veggies near one end of the wrap, then
Carefully fold this end over the filling, tuck in the sides and tightly roll the paper over to seal the wrap

Repeat this for the rest of the wraps, then place these onto a serving platter
For the dressing, mix together the almond butter, lime juice, agave, miso, soy sauce, garlic, ginger and chilli
Gradually drizzle in water whilst stirring until you’re left with a smooth dipping sauce
