Salsa Cauliflower Queso

Ingredients

  • 4 tbl of vegetable shortening
  • 2 tsp taco seasoning
  • 1/4 tsp each smoked paprika & garlic powder
  • 2 1/2 cups chopped cauliflower florets (6 oz)
  • 1/2 cup chopped med carrot (2.5 oz)
  • 3/4 cup chopped startchy potato (4oz)
  • 1 cup non dairy milk (I used oat)
  • 2 tsp nutritional yeast
  • 2 tsp white miso paste
  • salt/pepper to taste
  • 1 cup drained salsa

Preparation

  1. On stovetop, in large sauté pan, melt shortening on med heat, add spices,s/p, heat 1 min till fragrant

  2. Add cauliflower, carrot, & potato. Mix to coat with spices 2-3 min. Add non dairy milk & bring to a boil, then simmer on low/med heat 10-12 min until potatoes are fork tender

  3. Carefully add to high speed blender with remaining ingredients (except salsa) Slowly blend to high for 2-3 min till until sauce becomes steamy

  4. Pour into a large bowl & add salsa. Adjust seasonings if needed. Garnish with fresh herbs & more smoked paprika. Enjoy with tortilla chips along with all your favorite nacho toppings
