Single Serving Paleo Gluten-Free Pumpkin Muffin

Ingredients

  • 1 egg
  • 2 tbsp coconut flour
  • 1 tbsp almond flour
  • 1/2 tbsp maple syrup
  • 1/4 cup pumpkin
  • 2 tbsp unsweetened almond milk
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1 tbsp chocolate chips

Preparation

  1. In a bowl, whisk 1 egg.

  2. Add 2 tbsp coconut flour, 1 tbsp almond flour, 1/2 tbsp maple syrup, 1/4 cup pumpkin, 2 tbsp unsweetened almond milk, 1/2 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1/2 tsp baking powder, and 1 tbsp chocolate chips.

  3. Mix everything together.

  4. Grease a small ramekin.

  5. Pour the batter into the ramekin.

  6. Microwave for 3 minutes.

  7. Optionally, top with additional chocolate chips.
