Single Serving Paleo Gluten-Free Pumpkin Muffin
Ingredients
- 1 egg
- 2 tbsp coconut flour
- 1 tbsp almond flour
- 1/2 tbsp maple syrup
- 1/4 cup pumpkin
- 2 tbsp unsweetened almond milk
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1 tbsp chocolate chips
Preparation
In a bowl, whisk 1 egg.
Add 2 tbsp coconut flour, 1 tbsp almond flour, 1/2 tbsp maple syrup, 1/4 cup pumpkin, 2 tbsp unsweetened almond milk, 1/2 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1/2 tsp baking powder, and 1 tbsp chocolate chips.
Mix everything together.
Grease a small ramekin.
Pour the batter into the ramekin.
Microwave for 3 minutes.
Optionally, top with additional chocolate chips.
