Steamed Mixed Vegetable Muthia
Ingredients
- 1 cup finely chopped cabbage
- 1/2 cup finely chopped carrot
- 3 finely chopped spring onion
- Some finely chopped ginger, garlic and green chillies
- Some finely chopped coriander leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt as per taste
- Juice of 1 lime
- 2 teaspoons sugar (optional)
- 1/2 cup semolina
- 1 cup wheat flour
- Water as needed
- 1 tablespoon oil
- Some mustard seeds
- Pinch of asafoetida powder
- 1.5 teaspoons sesame seeds
- Some curry leaves
- Some Kashmiri red chilli powder
Preparation
Take a mixing bowl and add the chopped cabbage, carrot, spring onion, ginger, garlic, green chillies, coriander leaves, turmeric powder, coriander powder, and salt.
Leave the mixture to rest for 10 minutes.
Add lime juice and sugar to the mixture.
Stir in semolina and wheat flour.
Gradually add water to form a thick batter and mix well.
Apply oil to your palms and shape the mixture into cylindrical rolls.
Place the rolls on a greased food strainer.
Steam the rolls in a preheated steamer for 20 minutes with the lid covered with a cloth.
Allow the rolls to cool and then cut them into pieces.
Heat oil in a pan for tempering.
Add mustard seeds, asafoetida powder, sesame seeds, curry leaves, and Kashmiri red chilli powder.
Add the cut muthia pieces and cook for 5 minutes.
Garnish with fresh coriander before serving.
Notes
This muthia is crispy on the outside and soft inside, made healthier with added vegetables, and pairs well with a cup of tea.
